Belgian waffles in a cast-iron pan: on the grill, in the fireplace, at home

Golden in colour, crisp on the outside and soft on the inside, smelling of vanilla, you won't be able to ignore the Belgian smell and taste. With frozen berries, ice cream and caramel, maple syrup or even roasted bacon or scrambled eggs, these waffles will delight both the sweet tooth and the less sweet tooth. 

Making these waffles yourself is much easier than it might seem. Rhe recipe uses everyday ingredients and the waffles bake very quickly and effortlessly in a cast-iron pan. 

With PETROMAX or SANTOS frying pans You can make waffles not only in a charcoal cooker, but also on a gas or electric grill, in a barbecue, over a campfire, or even at home on your own stove. The only caveat is that once you've made them for friends and family, you'll be asked to make them more than once. Bake at least twice at once!

Ingredients:

  • 130 g of flour
  • 180 g of milk 
  • 70 g oil
  • 1 egg
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • Pinch of salt
  • Vanilla sugar to taste

Preparation:

  • Mix the dry ingredients: flour, baking powder, vanilla sugar, salt.
  • In another bowl, mix the milk, oil, sugar, egg yolk. Add them to the dry ingredients and stir gently.
  • Whisk in the egg white and gently fold it into the batter.
  • Leave to stand for at least half an hour. 
  • Bake in a preheated waffle iron over medium heat for one to two minutes (approximately) on each side.
Tips:
  • Ingredients must be at room temperature.
  • The dough should be stirred as little as possible - just enough to distribute the ingredients evenly.
  • Letting the dough stand improves its structure. If you plan to bake outdoors, mix the dough at home during a picnic: it will rise, be fluffier and more homogeneous. Plus, you'll only need to carry one bowl of dough in your travel bag instead of several tools and ingredients. It will be both more convenient and safer to transport.
  • Preheat the waffle iron well before the first bake. Warm it up a little before pouring the batter for the next waffles Waffle iron on both sides.

  • Before filling the batter, line the inside of the waffle iron with oil or grease with silicone brushwith a silicone brush moistened with oil. Note: This step may not be necessary if your cast iron pan has a good patina layer and the dough does not stick.
  • Pour the batter with a small scoop and spread it lightly over the tin. Be aware that the dough will rise as it bakes, so pour sparingly. 
  • The easiest and most convenient way to make waffles is from the pan with a bamboo skewer or fork.

Although waffles are extremely tasty without additives, you can also enjoy sweet additions to spice things up: sprinkle with icing sugar, ice cream, your favourite jam or maple syrupGrated or frozen berries, homemade liquid caramel, cream with mint or exotic fruits - there are no limits! 

Even those who don't like sweets shouldn't despair: Belgian waffles can be the original breakfast option. However, in this case, do not add vanilla sugar to the batter and reduce the amount of sugar in the recipe. These waffles are perfect with toasted bacon, omelettes or sausages. You can also add your favourite spices, herbs or even spinach or cheese to the waffle batter.
