Belgian waffles in a cast iron pan: on the grill, in the campfire, at home

Golden in color, crispy on the outside and soft on the inside, smelling of vanilla - you won't find Belgians indifferent to the smell and taste. With frozen berries, ice cream, caramel, maple syrup or even fried bacon, scrambled eggs - these waffles will please both sweet tooth and lovers of not so sweet dishes. 

Making these waffles yourself is much simpler than it might seem. Rthe recipe uses everyday ingredients, and the cast iron pan cooks the waffles very quickly and without any hassle. 

With PETROMAX or SANTOS pans You can make waffles not only in a coal, but also in a gas, electric grill, barbecue, over the coals of a campfire or even at home on your existing stove. The only caveat - after serving them to friends and family, be aware that they will be asked to repeat more than once. Bake at least twice at once!

Required accessories:

Waffle pan PETROMAX made of cast iron


Ingredients:

  • 130 g of flour
  • 180 g of milk 
  • 70 g of oil
  • 1 egg
  • 2 hours sugar
  • 1 tbsp. baking powder
  • A pinch of salt
  • Vanilla sugar to taste

Production:

  • Mix dry ingredients: flour, baking powder, vanilla sugar, salt.
  • In another container, mix milk, oil, sugar, egg yolk. Pour them lightly into the dry ingredients and mix lightly.
  • Beat the egg white and carefully fold it into the batter.
  • Leave to stand for at least half an hour. 
  • Cook on medium heat, in a preheated waffle iron, for a minute - two (approximately) on each side.
Tips:
  • The ingredients should be at room temperature.
  • The dough should be mixed as little as possible - just enough to evenly distribute the ingredients.
  • Leaving the dough to stand improves its structure. If you are planning to bake in nature, mix the dough at home during the picnic: the dough will be matured, fluffier and smoother. Plus, you only need to pack one bowl of dough in your travel bag instead of several tools and ingredients. It will be both more comfortable and safer to drive.
  • Before the first baking, heat the waffle iron well. Before filling the batter for the following waffles, warm it up a little waffle maker from both sides.

  • Before filling the dough, mold from the inside brush with oil or smear with silicone brush, dipped in oil. Note: This step may not be necessary if your cast iron pan have a good patina layer and the dough does not stick.
  • Pour the batter with a small scoop and spread it easily over the mold. Keep in mind - the batter will rise during baking, so pour sparingly. 
  • The easiest and most convenient way to make waffles pans you will bring it with a bamboo skewer or fork. 
  • After baking waffle maker clean and apply or spray with oil

Although the waffles are extremely tasty without additives, you can also enjoy sweet additives to diversify: sprinkle with powdered sugar, taste with ice cream, your favorite jam or maple syrup, mashed or frozen berries, homemade liquid caramel, cream with mint or exotic fruits - there are no limits here! 

Even those who don't like sweets, don't worry: Belgian waffles can be an original breakfast option. True, in this case, do not add vanilla sugar to the dough and reduce the amount of sugar in the recipe. These waffles go well with toasted bacon, an omelet or sausages. In addition, you can add your favorite spices, herbs or even spinach or cheese to the waffle batter.
