By the way, the provided marinade - the glaze will also go well with pork ribs. When traveling to nature, you can prepare this marinade in advance at home. Pouring it into a jar will make it safe and convenient to take outdoors, and the chicken will marinate in the time it takes to burn off the coals.

Ingredients (for chicken):

  • 8 pieces of chicken (thighs and drumsticks), room temperature
  • Salt and pepper

Ingredients (for marinade-glaze):

  • ½ cup (125 ml) fruit chutney (you can replace it with, for example, apricot or other sweet fruit jam or jam).
  • 2 hours (30ml) tomato sauce
  • 2 cloves of garlic, chopped
  • 2 hours (30 mL) Worcestershire sauce
  • 1/4 cup (60 ml) lukewarm water

For submission:

  • Fresh chopped coriander
  • Chopped chili pepper

Production:

  • Put the chicken pieces rubbed with pepper and salt into a deep bowl. Mix the marinade-glaze ingredients well. Pour half over the chicken and reserve the rest: it will be needed as a glaze halfway through cooking.

  • Leave the chicken pieces to marinate for half an hour. Meanwhile, preheat the grill.

  • Bake in indirect heat, at a temperature of ±130 degrees. Place the chicken pieces on the grill, skin side down. After 20-25 minutes, turn and continue cooking, basting the pieces from time to time. Cook until the chicken is cooked through and the skin is sticky, crispy and lightly browned.

  • At the end of cooking, you can increase the temperature - it will brown faster.

  • For extra flavor, you can smoke the chicken with your favorite wood chips at the beginning of cooking. Woods that give a mild, light smoke go well with chicken, e.g. olive tree, lemon tree, orange tree

  • Serve chicken pieces with coriander, sprinkle with chili.
